Recipe Week – Day 1 – Chicken ‘n Dumplins

I declare this week to be Recipe Week.  I have been making lots of “crock pot” food and bringing it in to my co-workers as guinea pigs.  They have loved everything I’ve cooked so far.  The first recipe I will share is the Chicken ‘n Dumplins that I brought in this morning.  Not to brag or anything but these are seriously the best dumplins I’ve ever had.  Sadly, they have RUINED Cracker Barrel for me.  How can I go back to sub-standard dumplins after trying this CRAZY EASY and TOTALLY AMAZING recipe! 

Here’s the ingredients:

1-2 cans of biscuits (I used about 12 biscuits actually so that was more than 1 can because I love lots of dumplins.  Next time I’ll use 2 whole cans!)
3-cans cream of chicken soup (10.5 oz.)
1-box of chicken stock (not sure on the oz. 24 I think)
A small amount of water maybe half a soup can
1 small onion, diced
3 or 4 chicken breasts (bonelss and skinless is what I used)
salt and pepper  

Combine everything together in the crock pot except the biscuits.  I cooked mine on low over night since I was bringing it in to work.  You could probably cut that in half by cooking them on High.  Then be sure to break the chicken up with a fork (it’s real easy after it’s been cooking a while) then add your biscuits!  I used a generic butter biscuit from Publix cut into strips.  Set it on High for about 30-40 minutes and they are ready to serve.  The perfect Southern Comfort food!
